A Step-by-Step Guide to Preparing Yamarita

Yamarita is a popular Nigerian dish that combines the sweetness of yam with a crispy, golden coating. This delightful recipe is perfect for breakfast, brunch, or even as a snack. If you’re looking to explore Nigerian cuisine or simply want to try something new and delicious, follow this step-by-step guide to prepare yamarita and treat yourself to a delightful culinary experience.

Ingredients: To prepare yamarita, you will need the following ingredients:

  • 1 medium-sized yam
  • 2 eggs
  • ½ cup all-purpose flour
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

STEP 1:Peel and slice the yam

Start by peeling the yam and cutting it into thick, rectangular slices. Make sure the slices are even in thickness to ensure even cooking.

STEP 2: Boil the yam slices

Place the yam slices in a pot and add enough water to cover them. Add a pinch of salt to the water to enhance the yam’s flavour. Bring the water to a boil and cook the yam until it is just tender but not overly soft. This will take around 8-10 minutes. You want the yam to hold its shape during frying.

STEP 3: Prepare the coating mixture

While the yam is boiling, prepare the coating mixture. In a shallow bowl, beat the eggs until well combined. In another bowl, combine the all-purpose flour, garlic powder, paprika, salt, and pepper. Mix the dry ingredients thoroughly.

STEP 4: Coat the yam slices

Once the yam is cooked, carefully drain the water and allow the slices to cool slightly. Take each slice and dip it into the beaten eggs, ensuring it is evenly coated. Then transfer the egg-coated yam slice to the bowl of the flour mixture. Coat the yam thoroughly with the flour mixture, pressing it gently onto both sides of the slice. Repeat this process for all the yam slices.

STEP 5: Fry the yam slices

Heat vegetable oil in a deep pan or skillet over medium heat. The oil should be hot but not smoking. Carefully place the coated yam slices into the hot oil, leaving enough space between them to ensure even cooking. Fry the yam slices until they turn golden brown and crispy, which will take approximately 3-4 minutes per side. Flip them gently to cook both sides evenly.

STEP 6: Drain and serve

Once the yamarita slices are golden brown and crispy, remove them from the oil using a slotted spoon or tongs. Place them on a paper towel-lined plate or wire rack to drain excess oil. This step helps to maintain their crispiness. Serve the yamarita slices hot and enjoy them as a standalone snack or pair them with a dipping sauce of your choice.
