- 2 onions
- 2 red bell peppers
- 2 Scotch bonnet peppers
- 1 tablespoon of crayfish
- 1 cup of palm oil
- 1 tablespoon of locust beans
- Salt to taste
- 2 Knorr cubes
- Meat (beef or chicken) or fish (optional)
- Water
Instructions:
Step 1
Wash the beans thoroughly and place them in a pot. Add enough water to cover the beans and bring to a boil.
Step 2
Boil the beans until they are soft, but not too mushy. This should take about 40 minutes to an hour, depending on the type of beans used.
Step 3
While the beans are boiling, chop the onions, bell peppers, and Scotch bonnet peppers and set aside.
Step 4
If you are using meat or fish, season and cook it separately.
Step 5
Once the beans are soft, remove them from the heat and drain any excess water. Place the beans in a blender or food processor and blend until it is smooth.
Step 6
In a separate pot, heat up the palm oil on medium heat. Add the chopped onions and sauté until they are translucent.
Step 7
Add the blended beans to the pot and stir continuously. Add water to the pot to adjust the consistency of the soup to your liking.
Step 8
Add the chopped peppers, crayfish, and locust beans to the pot and stir. Add salt to taste and the Knorr cubes.
Step 9
Allow the soup to cook for an additional 10-15 minutes on medium-low heat, stirring occasionally.
Step 10
Add the cooked meat or fish to the pot and allow the soup to simmer for another 5 minutes.
