Plantain fufu or plantain amala is one of the very healthy Nigerian staple meals. It is made from unripe plantain which has very low sugar content and is highly recommended to diabetic patients.
Plantain fufu has been reported to provide several nutritional benefits which include:

To prepare plantain ‘Fufu’ or ‘Amala’ for your loved ones, especially aged family members, the following steps should be followed:
Ingredients: 2 Green plantains peel, and into chunks, ¾ Cup Cold water or more
STEP 1
Cut off the tips (both sides) of the plantain
STEP 2
Slit the plantain open using a knife and peel with your thumb.
STEP 3
Cut both plantains into chunks or big slices.
STEP 4
Pour into a clean blender and blend while slowly adding water
N.B. The size of the plantains will determine the quantity of water needed but make sure you only add water to aid in blending.
STEP 5
Pour the plantains into a pan (preferably a non-stick pan) and cook over medium-high heat while stirring it continuously with a flat wooden ladle (orogun).
P.S. As the plantains cook you will notice the change in colour. If it’s too “hard” add a small quantity of water and stir until it’s fully cooked.
STEP 6
Once done, take off the heat and scoop out from the pot.
STEP 7
At this point, serve with your favourite soup, (preferably egusi) and enjoy!
